There are 75 species of the genus Crocus of the iris family Iridaceae. Some are known to have been cultivated since ancient times. The most famous of these is Crocus sativus, or the saffron crocus. Indeed, the name crocus is derived from the ancient Greek word for saffron. Saffron is the feathery, orange tip of the flower's pistil that is painstakingly collected, dried and used as a spice and dye as well as in liqueurs and medicine. It takes approximately 4,000 crocus blooms to provide one ounce of saffron. Crocuses grow in the wild from the Mediterranean to Afghanistan, but it is the garden varieties of crocus that have ensured its worldwide popularity among gardeners. These varieties were developed predominantly by enterprising Hollanders and, hence, have acquired the name Dutch crocuses. These include such hybrids as the Princess Beatrix, the Snow Bunting, the Cream Beauty and the Blue Pearl. Unlike that other Dutch specialty, the tulip, crocuses do not have bulbs. They grow from similar organs, known as corms, that replace themselves annually. Crocus flowers do not grow on a stem, but directly from the ground, and the yellow-flowered varieties bloom earlier than those of other colors. Two of the earliest bloomers are the Crocus korolkowii and Crocus sieberi that usually bloom in February, but have been known to show their colors as early as the month of January.
